Taco Soup

This is one of my families favorite soups. I like it also because it is easy to make and on the table in a matter of minutes. Enjoy...

Taco Soup by: Blu Graviet

1pound Ground Beef browned and drained of grease.
1 onion chopped
1 package Taco Seasoning
1 15oz. Can Stewed Tomatoes
2 cups water
1 8oz. Can Tomato Soup
1 can Corn (drained)
1 15oz. Can Kidney Beans (drained)
Brown hamburger and onions. Add all the ingredients. Bring to a boil, reduce heat and simmer 15 minutes. Serve with cheese and sour cream. We also use tortilla chips to eat it with.

Artichoke Dip

Sorry this took me so long to post. Here is the recipe.

Artichoke Dip
1 cup grated parmesan cheese
1 cup mayonnaise
1/2 cup finely chopped green onions
1 can (13 3/4) artichoke hearts well drained and chopped
1 tbsp lemon juice
1/4 tsp black pepper
Mix all together and place in small baking dish.

Combine and sprinkle over dip:
3 tbsp. dry unseasoned bread crumbs
1 tsp. olive oil

Bake until top is browned about 20 minutes.
Serve with crackers or a French baguette.

Creole potato salad...

Below are a couple more recipes from our RS recipe exchange this last week. The theme was BBQ/Picnic recipes.

Prep: 20 minutes Cook:12 minutes

3 lbs. red potatoes, cubed
1/2 c. mayonnaise
1/2 c. mustard with horseradish
1 Tbsp. red wine vinegar
1 1/4 tsp. garlic salt
1/2 tsp. dried thyme
1/4 tsp. ground red pepper
6 hard cooked eggs, chopped
1 medium sized sweet onion, diced

Boil potatoes 12 minutes or until tender. Drain and cool slightly. Stir together mayonnaise and next 5 ingredients in a large bowl. Add potato, egg, and onion, tossing gently. Makes 8 servings.

Great potato salad with a slight kick to it. katie

Grilled asparagus...

Fresh asparagus
Olive oil
Kosher salt (regular salt works fine)

Rinse and trim off bottom of asparagus stalks. Spread in a pan or on a rectangle of foil. Drizzle lightly with olive oil and roll asparagus around to coat. Sprinkle with salt. If using foil, fold sides together and roll up ends to form a pouch. Cook on grill about 20 minutes until tender. If using a pan, cover with foil and bake about 20 minutes on 350 until tender. katie

Homemade Hamburger Patties..

The amounts are all approximate as I don't actually measure anything when I make these. Adjust to your liking.

1-1.5 lbs. hamburger
1/2 c. bread crumbs
2 Tbsp. minced, dried onion (can substitute fresh)
1 tsp. garlic powder
2 Tbsp. worcestershire sauce

Mix all ingredients together. Form into balls and then shape into patties. Cook on the grill until done to your liking. Katie

Tomato Pasta Salad

1 package (7 ounces) small pasta shells
2 medium tomatoes, chopped (1 1/2 cups)
2 medium green onions, chopped (2 tablespoons)
2 garlic cloves, finely chopped
1/4 cup chopped fresh parsley
2 tablespoons olive oil
2 teaspoons chopped fresh basil or 1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/8 teaspoon coarsly cracked pepper

1. Cook and drain pasta as directed on package. Rinse with cold water; drain.
2. Mix remaining ingredients. Toss pasta and tomato mixture together. Cover and refrigerate about 2 hours or until chilled.

This reciepe was found on the Betty Crocker website. It serves 6 people. It is a great summer salad to make from items found in your garden.

Taco Salad

1 lb. taco seasoned, ground beef , browned and drained.
1 can kidney beans
1 can corn (drained)
1 can diced tomatoes (drained)
2 cups shredded cheddar cheese
1/2 bottle Catalina or French dressing
1 head of lettuce shredded
2 bags of chips (Tostitos and Spicy Nacho Doritos)
Sliced black olives are optional


Mix all ingredients, adding the lettuce and chips last. This makes enough for 10 people.
We had our reciepe group meeting on Thursday night and this was a favorite amongest all of the guest! Thanks Dorisanne for bringing it!
