I've done this recipe both my making my own meatballs and by using pre-made frozen ones (much easier and faster!) It's a good version of a sweet and sour recipe if you don't like the peppers and onions in the traditional recipes. You could probably substitute about a 1/2 c. of bread crumbs for the crackers. 1 lb. ground beef
10 soda crackers, crushed
1 egg
1/2 tsp. ginger
1/2 cup vinegar
1/2 brown sugar
1 Tbsp. corn starch
1 large can pineapple chunks
Combine uncooked ground beef, crushed crackers, egg, and ginger. Roll mixture into round meatballs and cook in skillet. Meanwhile, mix vinegar, brown sugar, corn starch, and juice from pineapple. When meat is cooked thoroughly, add sauce mixture. Stir until thickened. Add pineapple chunks. Serve over rice.
